Watermelon Feta Salad

Watermelon is hands down the most versatile fruit when it comes to cooking. Did you know that a watermelon is 100% edible? Yes, you read that right! You can cook and enjoy the entire watermelon in a recipe. I’ve seen it grilled, sauteed, pureed for sauces and sliced and chopped. There’s even tons of recipes using watermelon rind that have caught my eye.

 However, this time around we’re keeping our watermelon simple and classic. This watermelon feta salad is the perfect combination of salty and savory. It’s a refreshing dish that can be served as an appetizer or side dish. I love to serve it as an appetizer when I’m hosting guests in my home or as a side dish to grilled dishes. The great thing about this recipe is that anyone can make it no matter their level of cooking experience.

All of the ingredients in this dish are vegan and dairy-free. The ingredients work really well to bring out and enhance the natural flavors of the watermelon. The watermelon feta salad is by far my favorite because it’s so fresh and easy to make. I have all of the ingredients on hand all the time so I never have to worry about making a last minute store run when I want to make the dish. It’s the perfect salad for a lunch on a hot summer day or a midday snack. In just a matter of 15 minutes you’ll have a salad that everyone is sure to love.

Keep in mind that this watermelon feta salad is served best and tastes the freshest if it’s prepared just before serving. You’ll want to keep it in a refrigerator or cold space if you’re not ready to serve right away.

Another option if you’re not ready to serve your salad right away would be to cube your watermelon and add to individual serving dishes for your guests and top with the feta cheese crumbles. Add your salad dressing into a bottle with a pour top and allow your guests to drizzle the dressing over their salads once it’s ready to be served.

It’s best to strain your cubed watermelon in a strainer before adding it to the large bowl. This will allow any excess juices to strain from the watermelon and prevent your salad from getting soggy.

Watermelon Feta Salad

Ingredients

  • 1 seedless watermelon, cubed

  • ¼ cup olive oil

  • Salt and pepper to taste

  • ¼ cup fresh mint leaves (chopped)

  • 1 block Violife vegan feta cheese

  • Red onion, thinly sliced as garnish (optional)

Directions

  1. Add watermelon cubes to a large bowl.

  2. In a small bowl, whisk together olive oil, salt and pepper, and chopped mint leaves. Once combined, pour over the watermelon cubes.

  3. Add the Violife vegan feta cheese to the large bowl.

  4. Toss gently using a large wooden spoon.

  5. Garnish with red onions if desired.
