Pretzel Bars

In preparation for a cozy New Year's Eve this year, I created these tasty pretzel bars with a fudgy chocolate topping and extra crushed pretzels on top. They're vegan, gluten-free, and nut-free, making them a perfect treat for anyone you might be celebrating with. They freeze well so you can make them ahead and store them in the freezer.

The ingredients are simple: pretzels, oat flour (I make my own by blending oats in the blender), maple syrup to sweeten, coconut oil, vanilla, dark chocolate, and tahini (you can substitute any nut or seed butter.

Pretzel Bars

Bars

  • 3 slightly heaping cups pretzels (140g)

  • + extra pretzels for the top

  • 3/4 cup oat flour

  • 1/2 cup maple syrup

  • 1/3 cup + 1 tablespoon melted coconut oil

  • 1 teaspoon vanilla

  • 1/4 teaspoon salt

  1. Grind the pretzels in a food processor until broken down but chunky. Add the remaining ingredients and process until combined into a textured dough. 

  2. Spread into a parchment paper-lined 8x8" pan. 

  3. Place in the fridge to firm up while making the chocolate topping.

Chocolate Topping

  • 1/2 cup dark chocolate chips

  • 1/3 cup tahini or nut butter

  • 1/2 tablespoon melted coconut oil

  1. Add ingredients to a bowl set over a pot of hot water on the stove and slowly melt. 

  2. Whisk well and then pour over the bars and spread evenly. Sprinkle extra crushed-up pretzels on top. 

  3. Place into the fridge for at least 4 hours to firm up and then slice into 16 bars. Store in the fridge for up to 10 days or freeze.
