Air Fryer Egg Rolls

What better food is there than egg rolls? I’m a sucker for egg rolls and have tried so many different versions of them. I’ve even gotten my family to fall in love with them too. We have a few different recipes that are our go-tos but this newest recipe is by far at the top of the list. I make these as an appetizer, for my kid’s lunches and even for a snack throughout the day. You really can’t go wrong with these avocado egg rolls at all.

Did I mention that these egg rolls aren’t cooked the traditional way. Lately I’ve been really into air frying everything. They’re air fried to reduce the amount of oil used in the recipe.

With the air fryer you can achieve the perfect crunch without any of the guilt. Let’s dive right in!

Air Fryer Egg Rolls

Ingredients

  • Air fryer

  • Vegan egg roll wrappers

  • 3 large avocados, diced

  • 1/4 cup pre-made cabbage slaw

  • 2 tbsp cilantro, chopped

  • 2 tbsp olive oil

  • 3 tsp honey mustard

  • Salt and pepper to taste

  • 1 tbsp Just Egg (water can be used here as an alternative)

Instructions

  1. Add all ingredients to a bowl. Mix with a spoon carefully to avoid mashing the avocados.

  2. Place one egg roll wrapper on a flat surface (I use a cutting board) with a corner pointing towards you.

  3. Add about 1 1/2 tablespoons of filling to the egg roll wrapper. Do not overfill the wrapper. This will cause the wrapper to rip when rolling.

  4. Brush the edges of the wrapper with the Just Egg mixture.

  5. Fold the bottom corner up, 1/4 of the way over the filling. Roll up from side to side, fold top corner over all and press to seal.

  6. Spray both sides with cooking spray.

  7. Cool at 400 degrees for 6 minutes.

If you don’t have an air fryer, you can definitely cook these in a skillet or deep fryer. Heat your skillet with oil and fry the egg rolls until golden brown.

If you’re not ready to cook your egg rolls just yet or are meal prepping, you can freeze your egg rolls. Air fryer egg rolls can be frozen before or after they are cooked.

Tips for Making The Perfect Egg Rolls

  • Be sure to not overfill your egg roll wrappers. This can cause uneven cooking and breakage.

  • Spray your egg rolls before cooking. If you don’t have any cooking spray you can brush some Just Egg mixture onto the egg rolls before cooking.
