Peanut Butter Freezer Fudge

In honour of National Fudge Day, here's a healthy and delicious low carb peanut butter fudge recipe that can be whipped up in just minutes. Let it chill, slice it up, and start snacking! Note that it does melt quickly if left out of refrigeration so eat it directly out of the fridge or freezer. Oh, and it's only 5 ingredients!

Start by adding all of the ingredients to a heat-proof bowl and set over a pot of hot water to keep the mixture warm. Whisk the mixture until it’s smooth.

Pour into a parchment paper lined container or a bread pan. Place into the fridge for 1-2 hours to firm up or in the freezer for 30-60 minutes.

Once firm, remove from the fridge or freezer, slice it and press the peanuts into the top. Make sure you don’t add the peanuts before freezing as they’ll sink to the bottom due to their weight.

Peanut Butter Freezer Fudge

Vegan - Low Carb - Gluten Free

  • 1/2 cup natural peanut butter

  • 1/4 cup melted coconut oil

  • 4-5 tablespoons powdered lakanto or xylitol

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 cup chopped peanuts, optional

  1. Add all ingredients to a heat proof bowl set over a pot of hot water to keep the mixture warm. Whisk together until smooth. 

  2. Pour into a parchment paper lined container or a bread pan. 

  3. Place into the fridge for 1-2 hours to firm up or in the freezer for 30-60 minutes. 

  4. Once firm, remove from the fridge or freezer, slice it and press the peanuts into the top. Note: don't add the peanuts to the liquid mixture before chilling the fudge or they'll sink to the bottom.
