Are you looking for the perfect New Year’s Eve dessert? Look no further! This banana bread (or muffin) recipe is full of simple ingredients that will make you say YUM! It’s quick, easy and delicious! These make the perfect dessert for any party, especially that New Year’s Eve party that’s just around the corner!

When it comes to baking, I think there are people who love to bake and those who don’t want to spend their time on baking. I fall in the middle…I love to bake, but I don’t want the recipe to be complicated or take too long. I usually have four little helpers when I’m in the kitchen, so the easier the recipe, the better!

I work very hard to incorporate fruits and vegetables into every meal. It makes my family feel better and everyone is on board! Every meal is an opportunity to have more plant-based foods. I love knowing that when I serve my family plant-based foods, I am feeding them food that is good for their bodies. 

This banana bread recipe is not only the perfect snack or breakfast item, but it also makes for an awesome dessert. I take it to parties all the time and I always get a ton of compliments!

These banana bread muffins (or bread loaves) are always the first dessert gone from the dessert table (sometimes I even double the batch because of this). I think it’s because people like knowing that they can eat a healthier option, even at a party.  They often pick the dessert that has fruit in it, over the dessert that is lacking any sort of fruits or vegetables.

Today’s recipe is not only easy to make, but it’s also delicious! You are going to love how versatile the recipe is -- enabling you to make bread or muffins, plain or filled with goodies like blueberries, chocolate chips or nuts. This banana bread is filled with ingredients that are simple and easy to find. You can add anything you’d like to the bread or muffins. In the past, we’ve added chocolate chips, blueberries, bananas, peanut butter, and nuts. 

So today I'm going to share how to make our favorite banana bread (or muffins). This recipe is our favorite for a reason…just wait until you try it!

Banana Bread & Banana Muffins

Banana Bread or Muffins

  • 2 large overripe bananas

  • 2/3 cup brown sugar

  • 1/3 cup white sugar

  • ⅓ cup coconut oil or vegan butter

  • 1 1/2 teaspoon pure vanilla extract¼ cup almond milk or pea milk 

  • 2 cups flour

  • 1 1/2 teaspoons baking soda

  • 1/2 teaspoon salt


Instructions:

  1. Peel the bananas and mash them with a fork - leaving some chunky pieces for texture. Place mashed bananas in a bowl with sugars and whip together with a hand mixer on medium speed until frothy, about 2-3 minutes.   

  2. Add almond milk, oil, and vanilla. Mix together until combined.  

  3. Add flour, baking soda, and salt. Mix by hand until just combined. Do not over-mix, this will cause the bread to be tough.

  4. Now you have two choices: muffins or bread. For muffins, pour the batter into paper muffin liners. I like to use an ice cream scooper to ensure that each muffin is around the same size. Bake them at 350* degrees for 30-40 minutes, or until a toothpick poked in the center muffin comes out clean.

  5. For bread, pour the batter into a greased loaf pan. Bake at 350* degrees for 50 minutes to 1 hour. 

*If you find that the muffins or bread is browning too quickly, turn down your oven to 325 degrees and tent the pan with foil.
