Easy Lemon Mess
Instructions
For each serving, spoon ½ cup lemon curd into a glass or sundae cup. Spoon ¼ cup strawberries over curd and spoon about 2 tablespoons whipped cream or ice cream on top (if using).
You’ve Got Options
This dessert is popular in England, where it’s called Eton Mess. Instead of using lemon curd, combine 2 cups sliced fresh strawberries with 1 ½ to 2 cups softened French Vanilla Ice Cream, or store-bought.
And for real decadence, sprinkle 1 tablespoon vegan semisweet chocolate pieces over the top of each serving.

1 cup fresh strawberries, hulled and quartered (see options)

½ cup Coconut Whipped Cream, or store-bought
½ cup French Vanilla Ice Cream, or store-bought
