1-Minute Apple Pie

One of my favorite patriotic sayings was, "as American as apple pie" until I learned America's most iconic dish isn't actually American! What?!
Turns out apple pie's actual origin is England, where it can be traced back to the late 1300's, some 200+ years before the Pilgrims landed on Plymouth Rock.
Apples, too, are also foreign in that they aren't native to North America. (I suppose this fact gives greater context to the story of Johnny Appleseed, too.)
Nevertheless, apple pie is one of my autumn favorites (apples enter their peak season in the fall and early winter) and this recipe gives me all the flavor without the fuss of having to make pie crust. You also won't have an entire pie on your counter staring at you ;)
Two other upsides to this recipe: It's naturally gluten-free and if you leave off the yogurt (for the 'a la mode' experience) it's raw, too!
The best apples for traditional apple pie are Granny Smith, Golden Delicious, Gala, Braeburn, and Pink Lady, but any apple you like raw would be good here. My personal favorite is Honey Crisp.
1-Minute Apple Pie
Serves 1
Ingredients:
3 tbsp raisins (or dates)
1 apple
ground cinnamon (or pumpkin pie spices)
2 tbsp coconut flakes (or rolled oats)
3-oz vegan yogurt (plain or vanilla)
Directions:
Soak raisins in HOT water for 10 minutes (or overnight); Drain.
Shred apple with a cheese grater.
Toss shredded apple with cinnamon (about 1/4 tsp) until lightly coated.
Stir in raisins and coconut flakes (or 3 tbsp oats).
Top with yogurt.
Garnish with a dash of cinnamon, if desired.
Per serving: 288 calories, 6.5g fat, 55g carbs, 6.5g fiber, 41.6g sugars, 6.7g protein.
