Refried Bean And Rice Bowl

Instructions

Heat 2 tablespoons of the oil in a large skillet or wok over medium heat. Add onion and pepper and cook, stirring frequently, for 5 minutes, or until soft and fragrant.

Add broccoli, snow peas, and garlic and cook, stirring frequently, for 2 minutes, or until garlic is soft and fragrant.

Add remaining tablespoon of oil and cooked rice and stir well to coat the grains. Add soy sauce and cook, stirring constantly, until rice is evenly brown and heated through.

To Serve

Spoon rice mixture into four bowls and spoon ¼ cup refried beans into the center of each bowl. Garnish each bowl with 2 tablespoons cashews. Serve with hot sauce or chili sauce on the side if desired.

  • 3 tablespoons extra-virgin olive oil, divided

  • 1 medium onion, chopped

  • 1 red bell pepper, chopped

  • 2 cups chopped broccoli or cauliflower

  • 1 handful snow peas or green beans, roughly chopped

  • 2 cloves garlic, chopped

  • 2 cups cooked rice

  • 2 tablespoons soy sauce or tamari

  • 1 cup refried beans, store-bought

  • ½ cup chopped raw cashews

GARNISH (OPTIONAL)

  • Hot sauce or chili sauce
