NEW WAVE FOODS IS BRINGING SUSTAINABLE SEAFOOD TO YOUR TABLE

Let's face it, Americans love seafood, and there's no denying that the crown jewel of our feasts from the sea is the tiny, humble shrimp. In fact, "we eat over 1 billion pounds of shrimp in the US every year," and when it comes to sea critters overall, "scientist agree that 3/4 of the world’s fisheries are exploited or depleted and we could see fishless oceans by 2048." Now, we all enjoy indulging in a bit of ahi tuna or smoked salmon every now and then, but we have to admit, those statistics are pretty scary. While seafood is wonderfully delicious and fun to eat, we don't want to fish them to extinction!

Fortunately, there are an increasing number of ways for us to have our seafood and eat it too! On top of simply reducing one's fish intake in general, turning to sustainably produced seafood is an equally viable option. Enter New Wave Foods, a biotech startup dedicated to "creating products that are high in clean nutrients while completely eliminating the devastating environmental impact that commercial fishing is posing on our environment."

Currently, their target is, you guessed it, shrimp! By "[analyzing] shrimp on a molecular level to figure out the components," New Wave Foods' founders Dominique Barnes and Michelle Wolf have "come up with a substitute that has a similar texture, taste, color, and nutritional value" as real shrimp.
